A launching peel for pizza that's longer than it is wide: pizza by the metre, or pizza al taglio cut from a tray-baked rectangle. A round or square blade leaves half a long base hanging off the end, and an unsupported base folds; this one is 30 x 60cm, so it carries the whole thing flat. Perforated anodised aluminium on a 120cm red handle. Made in Italy.

Handle Length

One length only, and it is a long one: 120cm, made for full-size wood-fired and commercial pizza ovens, where a long base needs placing well back from the mouth. It will not work with a countertop oven; a 60cm blade is wider than the chamber of an Ooni Koda 12 or a Gozney Roccbox before the handle is even a consideration.

Blade width matters as much as handle length: worth checking the oven opening before ordering, since this blade is wider than every compact and countertop oven we stock, not just the ones named above.

FAQs

What is a rectangular pizza peel used for?
Pizza that is longer than it is wide. Pizza al metro is baked and sold by the length, and pizza al taglio is cut from a tray-baked rectangle. Both leave you carrying a base that a round or square blade cannot support end to end, and an unsupported base folds. The 30 x 60cm blade carries the whole length so the dough goes in flat.
Will a rectangular pizza peel fit an Ooni or Gozney oven?
No. A 60cm blade is wider than the chamber of a compact countertop oven such as an Ooni Koda 12 or a Gozney Roccbox, and the 120cm handle is far longer than those ovens need. This peel is specified for full-depth wood-fired and commercial pizza ovens. For a countertop oven, the 33cm round or square Tulip on a 30cm handle is the right choice.
Can you use a rectangular peel for round pizzas?
You can, but there is no advantage and a fair amount of blade hanging off either side of the dough, which catches at the oven mouth. For round bases the round Tulip is the neater tool, and the square Tulip suits wider or slacker doughs.
Why is the blade perforated?
So the semolina and flour on the blade fall away before the pizza reaches the stone rather than going in with it and burning on. That matters more on a long base than a round one, because there is more blade carrying more flour. The perforations also reduce contact between blade and dough, so a long base releases cleanly instead of dragging as you pull back.
How do you clean a Cerutti pizza peel?
Hand washing in warm soapy water and drying is all it needs. It is not dishwasher suitable and at this size would not fit one. The anodised surface resists the staining and corrosion that untreated aluminium picks up, so there is nothing to season or oil. Brushing loose flour off the perforations after each session keeps it working properly.
What does the ribbing on the blade do?
It stiffens the blade along its length. A 60cm blade carrying a loaded base has a long way to flex, and the ribbing is what keeps it flat so the pizza sits where you put it rather than sagging in the middle on the way to the oven.
Will this peel fit the ZiiPa Piana?
No. The Piana's cordierite stone and oven opening are sized for a blade of around 31cm or under, and every Cerutti Inox peel starts at 33cm. For Piana compatibility, the ZiiPa Aquila is the fit, at 30.5cm.
Will this peel fit my Ooni or Gozney oven?
No. At 30 x 60cm, this blade is far larger than the opening of any single-pizza Ooni or Gozney oven, including the Koda 16 and the Dome. It's built for full-size wood-fired and commercial ovens with a much larger mouth.
